Ice Cream Manufacturing
Background
Ice cream mixes involve the addition of large quantities of powders into liquid, including many different stabilizing and emulsifying agents. Typical ingredients include:
- Milk powders
- Whey & protein powders
- Stabilizers including gelatin, egg white, plant & cellulose-based gums
- Emulsifiers
- Sugars & artificial sweeteners
- Cocoa
- Color & flavoring agents
Conventional mixing methods often result in long processing times, poor yield of raw materials, excessive air incorporation and the development of lumps of partially hydrated material which can build-up on the tank walls and heat exchanger surfaces. This can impair heat transfer, make cleaning difficult, and affect the performance of the homogenizer.
Premium Ice Cream Starts with the Right Mix
The Quadro Ytron XC Powder Disperser is an in-line mixing and dispersion unit designed to incorporate and disperse large quantities of powders into liquids in a single-pass. The advantages of single-pass processing include:
- No Lumps
Eliminates filtering, time consuming product recirculation and downstream processing issues with heat exchangers or homogenizers. Raw ingredient yields are maximized. - Minimized Air Entrainment
Eliminates product foaming, waiting for de-aeration and the usage of de-foaming agents. - High Capacity Solids Incorporation
Eliminates the need for recirculation often resulting in batch time reductions up to 80% - Flexibility
Portable in-line mixer eliminates the need for specialized mixing equipment to be dedicated to each and every batch vessel. - Easy Clean-up
Mixer clean-up is quick & easy and has USDA Dairy, 3A, CIP design approval.
Quadro's Approach
The Quadro Ytron XC Powder Disperser has a dual-stage reactor housing designed specifically to incorporate and disperse large quantities of powders (up to 40% by weight) into a liquid stream. The first stage in the reactor creates a strong vacuum ensuring the powders are drawn into the reactor head.
Immediately after the powder comes into contact with the liquid, the pre-mix is subjected to directional and velocity changes as the mix repeatedly impinges on stationary baffles. The second stage tangentially discharges a smooth, lump-free, homogeneous product.
